wine aging

There is no magic recipe for breeding. We make our choices based on the blend and its characteristics, to create unique cuvées.

We select the different types of aging according to the juices to guarantee Languedoc Roussillon wines with finesse, freshness and generosity.

Wine, Vinification & Blending

The harvesting and sorting of the grapes are done by hand on all of our creations. The harvesting is carried out early in the morning in order to preserve the freshness of the grapes.

The keystone of fermentations is to let nature do its job by minimizing the handling of musts.

We favor indigenous yeasts and strict control of temperatures.
