What's better than a fresh beef tataki? Here are Chef Taparel's advice for the recipe and our advice on the wine to choose for this dish.

What does tataki mean in cooking?

“tataki” refers to a Japanese preparation of meat or fish. The idea is to sear the piece of meat or fish on the outside. This technique was put in place to avoid hygiene problems to avoid consuming completely raw fish where bacteria could develop. The pieces are then marinated very briefly and cut into thin slices.

What wine to drink with beef tataki?

The ingredients for monochrome beetroot beef tataki:

  • 1 raw beet
  • 1 chioggia beet
  • cherries in syrup
  • 1 purple endive
  • cut of beef
  • soy sauce (salty and yes!)
  • Sesame oil
  • fresh lemongrass
  • Olive oil & vinegar
  • mint
  • coriander
  • bread nuts
  • yellow lemon
  • edible flowers

    Tips for preparing beef tataki:

    • Steam the raw beets sous vide for 1 hour 15 minutes at 90° then cool by immersing them in cold water after cooking.

    • In a bowl prepare your Asian sauce based on soy sauce, sesame oil, wazabi, balsamic vinegar and lemon juice. Marinate everything as long as possible so that the flavors diffuse. Chop the coriander, mint, pine nuts and lemongrass and reserve them in the same bowl, this mixture will be used to season your dish, separate this preparation into two bowls.

    • Sear your beef fillet in a very hot pan on each side of the meat. Then cut your fillet into thin strips and immerse them in your marinade.

    • In a salad bowl, mix the different beets, the cherries in syrup and the purple endive. Add your Asian marinade.

    • Take your most beautiful plate and arrange the dish to your liking to add a little magic, add some edible flowers and that's it!
